4 cups cooked rice 1 tsp salt
2 T oil ½ tsp sugar
Small chopped onion 3 eggs, beaten
1 cup chopped ham 2 chopped scallions
Chop vegetables while rice is cooking. Heat skillet on medium-high heat. Add oil and coat pan.
Add onion, toss for about 15 seconds. Add ham, salt, sugar and toss well. Add eggs, tilt pan, lift edges and turn pan. When edges are set scramble eggs.
Quickly add rice . Toss to mix with ham and eggs to cook evenly. Toss often until rice is hot, 2-3 minutes more. Add onion and mix well.
